Short answer yes. Medium answer, depends on how close to coals and if you have flames, also plank MUST be soaked 24 hours. Long answer, I'm writing a blog right now questioning the entire process, the cost versus the results, frankly, I've done it a few times and don't notice any difference from cooking skin down direct or skin off in foil packers, especially of you are using seasoning.
