The University of Mizzouri has an annual Chili cookoff during the United Way campaign as a fund raiser. I was fortunate enough to win it in 2010 and then I retired. I was coaxed out of retirement this year to defend my title (LOL). Actually, I think the REAL reason is not that my chili is special but I put a little bit of effort into the presentation...in 2010 we did a medical theme, IV bags, etc. This year it's GRAVE DIGGER CHILI - CRUSHING THE COMPETITION. (sneak peak of the nearly completed display)...no plain 'ol crock pot carry in for this guy. LOL.
Here's the recipe!. Keep On Eggin!
GRAVE
DIGGER CHILI
Ingredients
·
1.25-2 #-Lean Ground Beef
(to taste)

Garlic Salt
|
·
1-Large Vidalia Onion
|
·
Garlic Pepper
|
·
2 -28 oz. Peeled Tomatoes
|
·
Garlic Bulb
|
·
2 -16 oz Bush Dark Red
Kidney Beans
|
·
Water
|
·
8 -12 oz-Barilla Elbow
Macaroni (small)
·
Lysander’s Chili Seasoning
|

Preparation and Cooking
Directions
·
In a large soup kettle,
brown the ground beef with chopped Onion and 4-8 cloves of garlic (to
taste). Stir and continue browning
until medium well.
·
Add 2 to 4 TBS Lysander’s
Chili Seasoning then add ½ tsp of Garlic Salt and a pinch of Garlic Pepper
(to taste) and finish browning the beef.

Add the Kidney Beans
and Tomatoes, slightly chopped in the
can (do not drain)
·
Bring to a boil and reduce
heat. Stir and cover then simmer for
40 minutes
·
Add Elbow Macaroni (dry)
and simmer for 10 minutes, stirring frequently
·
Add 16 oz. of water and
continue to simmer for 10 minutes.
Finished product will be thick like chowder & not soupy;
Serve with Green Onions,
your favorite HOT SAUCE and Cheese
